healthy eating my way (allergy friendly)
So I think I can say with assurance that winter is def. here. Today it was -38 F ( about 35-36 C) When I was out walking my 2.5 miles after my gym session. I think I am warmer than the people that get to their cold cars, and have to wait for their cars to heat up. At least when I am on the move..lol. The temperature change happend very quickly, there has been a huge drop.
With the cold, the winter and that cold breeze that we have been having here lately I was craving something warm. And that is why I made this 7 vegetable soup, so yummy. If you like serve it with some bread on the side!
Makes 4-6 servings
1 tbsp coconut oil, or oil of your choice
2 cloves of garlic
1 cup (2.5 dl) chopped green onions
1 cup (2.5 dl/ or 2-3 stalks) chopped celery
2 small carrots
1 sweet potato
1 small yellow squash
6 cups (15 dl) or just one whole broccoli, chopped
6 cups (1.5 l) vegetable broth
1/4 tsp cayenne pepper
1/4 tsp cinnamon
salt and pepper to taste.
1) Heat up the oil, add the garlic and green onions. Sauté until soften.
2) Add the other vegetables, and let simmer for 5-10 minutes
3) Add the broth and spices
4) Cook with a lid on for 15-20 minutes. Or until all the vegetables are soft.
5) Pour the soup in a blender and blend until smooth.
6) Garnish with some pumpkin seeds and cayenne pepper.
The soup made the house smell amazing, and it tasted even better!
