healthy eating my way (allergy friendly)
1 clove garlic, chopped
1/2 cup (1 dl) green onions, chopped
1 tbs coconut oil
1 lb ( 450 gr) tomatoes, peeled and chopped *
26 oz (7.5 dl) chicken stock
salt and pepper to taste
2 tsp dried basil
1/2 cup (1 dl) cream or milk of your choice
10.6 oz ( 300 gr) smoked ham, chopped* garnish
1 hard boiled egg pr person
*Heat up a pan with water, let it boil, add your tomatoes, and let them soak for a couple of minutes until the skin cracks. It makes it easier to peel them. After peeling the remaining skin off, chop the tomatoes up.
Add the coconut oil, and let it melt, add garlic and green onions and stir it until soft. Add the tomatoes. And let simmer for about 5 minutes. Add in the chicken stock, spices and milk. Let simmer for another 5-10 minutes.
Serve the soup with a hard boiled egg in each persons soup, and smoked ham as garnish.
