Clean Eating Spicy Clementine Vinegar Chicken Legs

 

 

 

 

 

 

 

 

This recipe is very easy, and so very  tasty.

Makes 2 servings

Ingredients that you’ll need:

Juice of 1 clementine

2 tbsp rapeseed oil

2 tbsp gluten free soy sauce

2 tbsp apple vinegar

1 tbsp raw honey

1/2 tsp ground chile

1/2 tsp sea salt

1/2 tsp pepper

2 chicken legs

2 servings of brown rice

1/2 cup ( 1 dl) small broccoli florets

1 1/2 tsp clementine zest

1/4 tsp sea salt

2 tbsp oil for cooking

1 clove garlic finely chopped

1/2 cup ( 1 dl) clementines

 But after making  this I found out I should have made the marinade sauce and just put in to the side. And then cook the chicken all the way through with just oil and garlic, and towards the end of the cooking time pour the marinade over the chicken for flavor. Lesson learned.  Let me know what you do. 

 

Ingredients:

Juice of 1 clementine

2 tbsp rapeseed oil

2 tbsp gluten free soy sauce

2 tbsp apple vinegar

1 tbsp raw honey

1/2 tsp ground chile

1/2 tsp sea salt

1/2 tsp pepper

2 chicken legs

Let it marinade for 30 minutes – 2 hrs

 

2 servings of brown rice

1/2 cup ( 1 dl) small broccoli florets

1 1/2 tsp clementine zest

1/4 tsp sea salt

Cook rice as described on package, at the final 2 minutes of cooking add broccoli. Remove from heat and add sea salt and zest. 

 

 

 

Before adding the chicken to the heated frying pan. Add 2 tbsp oil for cooking, and1 clove of garlic finely chopped. Sauté for 1-2 minutes. 

Add the marinated chicken to a pan. 

And then add 1/2 cup (1 dl) of clementines

Cook until chicken is all the way cooked.
