healthy eating my way (allergy friendly)
2 tbsp olive oil
2 cups (5 dl) white onions
1 cup (2.5 dl) red onion
1 clove garlic, chopped
3 cups (7.5 dl) chicken stock ( I used unsalted)
1 cup (2.5 dl) water
1/4 cup (1/2 dl) red wine (optional)
2 tsp rosemary
salt, pepper and bouillon to taste
2 tbsp parmesan cheese
1/2 cup (1 dl) cheese of your choice
1. Heat up the oil in a pot. Add the onion, and continually stir until tender and translucent.
2. Add the chicken stock, water, rosemary and wine.
3.Season with salt,pepper and bouillon and let simmer for 20-30 minutes.
4. Set oven to broil ( Norwegian: grill meny)
5. Ladle soup into oven safe serving bowls (optional: and place one slice of bread on top of each ). Add 1 tbsp parmesan cheese, and divide the cheese of your choice.
6.Place bowls on cookie sheet and broil in the preheated oven until cheese bubbles and browns slightly.
Let cool of for a bit!
