healthy eating my way (allergy friendly)
So I volunteered to make some cookies for an event. And I made these. So easy to make.
Makes 50-60 cookies
1 cup (240 ml) powdered sugar
1 cup (240 ml) vegetable shortening
1 tsp vanilla extract
1 tsp almond extract
1/4 tsp salt
2 cups (475 ml) flour ( your choice) ( I used gluten-free flour)
1/2 cup (1 dl) blanched almond flour
1)Preheat oven to 400F
2)Whisk together the powdered sugar and the shortening until fluffy
3) Add in the other ingredients while stirring.
4) Use a spritzer and “squeeze” them out on parchment paper
5)They melt a little, so have a little space between them
6) Bake for 9-10 minutes. Keep an eye on them!
