Clean Eating Carrot and Apple Muffins

Makes 12-14 muffins

2 carrots grated

1 apple chopped

2 egg whites

1/2 cup (1 dl) agave nectar

2 cups (4.5 dl) spelt flour

1 tsp baking powder

1 tsp baking soda

1/2 tsp himalayan salt

1 tsp cinnamon

1 cup (2.5 dl) cultured coconut milk  ( or buttermilk)

1/4 cup (1/2 dl) grapeseed oil

2 tbs arrowroot starch

Directions:

1) Preheat oven to 400F (200C)

2) Mix all your ingredients and fill up the muffin cups until 3/4 .

3) Bake for 10-15 minutes

4) Let cool off, and add frosting if desired.

Enjoy!

    These sounds so healthy, yet still absolutely delicious. I know I’ve had some “clean” muffins that just lack flavor, but the ingredients here seem like they would keep the flavor in tact. 🙂
