Purple Scalloped Potatoes/ Fløtegratinerte poteter (Norwegian) with a twist

Todays dinner was a little special. It is my brothers first time to the US, and he came here yesterday. Yeay!!. My mother in-law said I made this a little bit different then the way she was normally used to making scalloped potatoes. But this is a easy, and quick way of doing it.

The colors of the day is red and purple. The potatoes are purple, and the kale was red.

Ingredients

28 oz (794 gr)  thinly sliced purple potatoes ( or just normal potatoes)

1 green onion, chopped

2 cloves of garlic, chopped

1 1/2 tsp himalayan salt

1/2 tsp pepper

1 cup ( about 2.5 dl ) heavy creme ( you can choose a vegetable based one)

1 cup ( about 2.5 dl) grated cheese of your choice

1)Preheat oven to 400 F (200C)

2)Slice up the potatoes, and put them in a deep dish

3)Add the salt, pepper, garlic, and green onions. Pour the heavy creme over.

4)Bake in oven for 30 minutes, take out and add cheese. Bake for another 15 minutes

5) Let cool of for 5-10 minutes

I served this with a baked chicken breast tenderloin, and red kale chips.

      I found both the purple sweet potatoes, and the purple potatoes over here in the States. I had just read about them earlier. But here they are every where:) Hopefully you find them too:)
