healthy eating my way (allergy friendly)
Today it was a family dinner, and it was my nephews’ birthday. So I wanted to make something special, and something they would like. It was a big hit.
We were 5 grown ups, and 2 kids
1/2 cup (1 dl) melted unsalted butter
1/4 cup (1/2 dl) grapeseed oil
2 tbsp herbes de provence
1 tbsp dill
1 tbsp himalayan salt
1 tbsp pepper
1/2 cup (1 dl) grapefruit juice
Juice of 1 lemon
2 cloves of garlic chopped
1 green onion, chopped
2.2 lb ( 1 kg) boneless chicken breasts
Marinade for a couple of hrs
Preheat oven to 400 F (200 C)
Place the chicken breasts in a deep dish.
Bake for 20-30 minutes.
I served the chicken with baked sweet potatoes and spinach salad.
