Orange Muffins

In this recipe I have added no sugar, but I have used yacon powder, and lucuma powder instead.  I had frosting on, but you can use no frosting if you prefer. Or use a frosting out of creme cheese instead.

Makes 6 muffins

2 eggs

1 tsp yacon powder

1 tsp lucuma powder

1 tsp baking soda

1 tsp orange extract

2 tbs sour creme

Grated zest of 1/2 orange

1 dl (1/2 cup) spelt flour

1 dl (1/2 cup) oatmeal

Frosting

5 tbs icing sugar

2 tbs freshly squeezed orange juice

1. Pre-heat oven to 200 C (400F)

2. Whisk together eggs, yacon and lucuma powder. Add in the other ingredients.

3. Divide over the muffin cups.

4. Bake for 10-15 minutes.

5. Let cool off, and put on frosting.

Enjoy!

    I have just opened a box of groceries and inside is a packet of lucuma powder. I have never heard of it before and literally, within minutes of handling some for the first time ever, I see your recipe which has some in it :-). It must be a sign that I have to make these. I don’t have the yacon though.
