Yes, you heard it right. Apple Omelet. But hear me out. It might seem strange. But try it and you can decide for your self. It just like an apple pancake.Minus the flour and the milk. I got surprised. In this recipe I used herbamare salt a herbal salt, since I have a love hate relationship with salt. This makes me use less.
1 apple washed, peeled and diced
1/2 tsp herbamare meersalz/herbal salt (if you don’t have it available use salt and pepper)
3 tbs heavy creme ( I used “Conditio whipping creme” lactose free)
1 tsp palm sugar (maple syrup is also a good option)
1 tbs coconut butter
1. In a skillet or frying pan, melt the coconut butter. Add the apple dices, and saute them until tender.
2.Take out the apple dices. Turn down the heat a little on the eye. Whisk together the eggs, creme, salt, and sugar. Pour the mix into the pan.
3.When the bottom of the omelet has begun to set, place half of the apples on the top.
4. When the bottom of the omelet is completely cooked, fold it over. Let it cook all the way through.
5. Serve warm with the remaining apples on top.
