healthy eating my way (allergy friendly)
First things first, I was out walking the other day. Maybe it is my child like imagination, but can you see the man with be beard, and hands in front of him in that tree? I know the picture turned out a little dark.
So like I have said: I love the smell of christmas, and adding different spices to my baking.
Makes about 6-8 cookies
2 tbs molasses
1 dl grated carrots
5 tbs coconut oil (melted)
1/2 tsp ground nutmeg
1/2 tsp ground ginger
1/4 tsp pepper
1 tsp cinnamon
zest of 1/2 orange
2 dl spelt flour
1 1/2 tsp baking powder
1 dl buttermilk powder ( you can skip this and just use more spelt flour)
1.Pre-heat oven to 200C
2. Mix together first the wet ingredients, and then the dry ones.
3. Use a spoon to add the dough onto the baking sheet
4. Cook for 12-15 minutes
5. Serve with your own choice of topping. Can also be served without.
This weekend we are going to make all the christmas cakes/cookies here, not all the 13 different once that some make, but we are going to make some 🙂
