Egg & Cheese muffins with Coconut flour

Yes, I am on a muffin role. Its been a lot of muffins here lately.  I found the inspiration to these muffins on “Cheeseslave”. So easy to make, and just grab-and-go. They are low carb.And an excellent start to the day, or an easy snack later on.

Makes 6 muffins

4 eggs

3 tbs coconut oil (melted)

1/4 tsp sea salt

3 tbs coconut flour

1/2 tsp baking powder

1/2 cup Cheese ( Jarlsberg or Cheddar)

1.Preheat oven to 350 F

2.Mix it all in the blender, ( you can save some cheese to sprinkle on the top)

3. Let bake for 10-15 minutes
