healthy eating my way (allergy friendly)
So the weekend is getting close, again. And my chocolate cravings are building up. These muffins are medium sweet. Add some frosting and you ready to go. And it was an excuse to use my newly bought Martha Stewart nonstick 12 -cup muffin pan.
Makes about 20 muffins
2 cups ( 250 gr) all-purpose flour ( gluten free)
1 cup ( 125 gr) palm sugar
1 tsp baking powder
1/2 tsp salt
1 tsp baking soda
2 large eggs
1 tsp vanilla extract
4 ounces (125 gr) melted chocolate
1 cup ( 2.5 dl) milk ( of your choice)
1/4 cup (50 gr) chopped chocolate
1/2 tsp cinnamon
2 tbs coffee ( optional)
2 tbs coconut oil
1/4 cup (50 gr) apple sauce
1.Preheat oven to 350 F (200C)
2.In a pan add the 125 gr chocolate, milk and coconut oil, heat up, and let it blend well together.
3. Mix the remaining ingredients together
4. Fill the muffin forms half way, and add a chocolate bite (or more to each muffin) before putting them in the oven
5. Bake for 10-15 minutes.
6.Cool off and add frosting.
